Ep.10 Solsongju & Suyuk

Chef Fabrizio Ferrari visits Hamyang, Gyeongsangnam-do, where the beauty of Jirisan meets the charm of traditional hanok. At Jirisan Hamyang Market, he discovers local specialties including wild-cultivated ginseng, onions, and Hamyang Jirisan black pork, then heads to the Solsongju Brewery to explore the region's traditional liquor.
After tasting Solsongju and Damsol, he creates tender suyuk simmered with Solsongju and pine needles, along with onion jangajji made from grilled onions. The episode concludes with a special table pairing Hamyang's local ingredients with a traditional liquor crafted from a 500-year-old recipe.

Hamyang Jirisan Black Pork Suyuk
① Prepare the broth with vegetables, doenjang, solip, and Solsongju.
② Simmer the ogeopsal until tender.
③ Make the dipping sauce with saeujeot and onion jangajji.
④ Slice the suyuk and serve with the jangajji and dipping sauce.

Hamyang Onion Jangajji
① Cut the onions into 12 large wedges.
② Brown both sides and cut into bite-sized pieces.
③ Boil the water, sugar, soy sauce, and vinegar to make the brine.
④ Top with cheongyang chili and red chili.
⑤ Pour over the brine to finish.


Ep.10 솔송주와 수육

지리산의 자연과 고택의 정취가 살아 있는 경상남도 함양을 찾아간다. 파브리 셰프는 지리산함양시장에서 산양삼과 양파, 함양 지리산 흑돼지를 만나고, 지역의 전통주를 찾아 솔송주 양조장으로 향한다. 함양의 쌀과 누룩, 솔잎과 송순으로 빚은 솔송주, 그리고 이를 증류해 만든 담솔을 맛본 뒤, 솔잎과 솔송주를 넣어 삶은 수육과 노릇하게 구운 양파로 만든 양파 장아찌를 완성한다. 함양의 식재료와 500년 전통의 술이 어우러진 특별한 한 상을 만나본다.

-함양 지리산흑돼지 수육-
① 채소와 된장, 솔잎, 솔송주로 육수를 만든다.
② 오겹살을 넣고 부드럽게 삶는다.
③ 새우젓과 양파장아찌로 양념장을 만든다.
④ 수육을 썰어 장아찌와 양념장을 곁들인다.

-함양 양파장아찌-
① 양파를 12조각으로 큼직하게 손질한다.
② 양면을 노릇하게 굽고 한입 크기로 자른다.
③ 물, 설탕, 간장, 식초를 끓여 절임장을 만든다.
④ 청양고추와 홍고추를 올린다.
⑤ 절임장을 부어 완성한다.
