A special guest joins Chef Fabrizio in Yesan, Chungcheongnam-do. After working at a Michelin-starred restaurant in New York and serving as a head chef in Korea, Chef Park Ji-young now presents her own style of Italian cuisine. Guided by Chef Park Ji-young, a proud Chungcheong native, they explore the bustling five-day market held at Yesan Yeokjeon Market on dates ending in 3 or 8, discover Yesan's celebrated apples and traditional noodles, and uncover the region's rich culinary heritage. From apple wine and the premium spirit Chusa 40 to a vibrant bibim guksu made with freshly grated apples, this episode reveals how one iconic ingredient transforms into an unforgettable pairing.

Yesan Apple Bibim Guksu
① Make the sauce with grated apple, gochujang, gochugaru, ganjang, etc.
② Marinate the julienned apple with Chusa 40, vinegar, and honey for 5 minutes.
③ Prepare onion, garlic chives, and a boiled egg for the garnish.
④ Cook the somyeon, rinse it in ice water, and drain well.
⑤ Add the sauce and toss well.
⑥ Plate the noodles and top with the garnish and apple garnish.


Ep.11 사과와 국수

스페셜한 친구가 온다. 뉴욕의 미쉐린 레스토랑과 국내 헤드 셰프 경력을 거쳐 자신만의 이탈리안 요리를 선보이는 박지영 셰프. 충청도가 고향인 그녀가 길잡이가 되어 파브리 셰프와 충남 예산의 맛을 찾아 나선다. 두 사람이 향한 곳은 매월 날짜 끝자리가 3이나 8인 날 열리는 예산역전시장에서 열리는 오일장. 장터를 누비며 예산의 대표 특산물인 사과와 국수, 신선한 지역 식재료를 만난다. 큰 일교차와 비옥한 황토에서 자란 예산 사과와 오랜 제면 전통을 품은 쫄깃한 예산 국수. 이어 예산사과와인을 찾아 사과와인과 프리미엄 증류주 ‘추사40’을 맛보며 예산 사과의 또 다른 매력을 발견한다. 파브리 셰프는 간 사과를 넣은 매콤한 비빔장에 소면을 버무리고, 추사40에 가볍게 재운 사과채를 올려 사과비빔국수를 완성한다. 사과가 술과 요리로 변신해 특별한 한 상을 이루는 충남 예산의 페어링을 만나본다.

-예산사과비빔국수-
① 간 사과와 고추장, 고춧가루, 간장 등으로 양념장을 만든다.
② 사과채에 추사40과 식초, 꿀을 넣어 5분간 재운다.
③ 양파와 부추, 삶은 달걀을 고명으로 준비한다.
④ 소면을 삶아 얼음물에 비벼 씻고 물기를 뺀다.
⑤ 소면에 양념장을 넣어 고루 비빈다.
⑥ 그릇에 담아 고명과 사과채를 올린다.
